Abstract
Inulinases is an important enzymes for production of fructose and fructooligosaccharides, which
are extensively used in pharmaceutical and food industry. This study was conducted to select the
inulolytic fungi. Ten fungal isolates that isolated from dahlia tubers, produced an extrasellular
inulinase. The isolates genus were Aspergillus, Penicillium, Rhizopus, Acremonium and Fusarium.
Eight of the isolates produced moderate and high inulinase activity at 30oC and three of these
isolates can grow at 45oC but only one has high inulinase activity at 45oC. The highest inulinase
isolat was identified as Aspergillus sp1. This isolate produced 1,76 mg fructose/ml.
