dc.description.abstractCanned fish are one kind of favorite products because it is easy to use and it could be stored for long time. However, metal composition of the can is possible to contaminate the fish. The aim of this study was to determine the concentration of Fe, Sn and Pb in the canned sardines. Concentration of Fe was determined using a UV-Vis spectrophotometer, while the concentration of Sn and Pb were determined using an atomic absorption spectrophotometer at the wavelength of 286.3 nm for Sn and 283.3 nm for Pb. The results showed that the average of Fe concentration in canned sardines based on different expiration dates for sample A1 and A2 (mg/Kg) were 4.046 and 3.347, respectively. The highest concentration of Sn was found in sample A1 (105.54 mg/Kg) and the concentration of Pb was ranged from 0.5199 to 2.3798 mg/Kg. These indicated that canned sardines have been contaminated by Fe, Sn and Pb, but did not pass the maximum limit of metal contamination for canned food allowed by SNI 01-7387-2009 except for Pb content (more than 0.3 mg/Kg).en_US
