Abstract

Fish is a food material that has high protein content, which cause fast decay by microorganism. Because of that, it needs a preservation process. One of preservative material used is formaline. Formaline is a chemical substance that used for fish preserving because it easy to find and has low cost. Qualitative analysis of formaline used potassium permanganate and chromatophic acid while quantitative analysis used High Performance Liquid (HPLC) and protein analysis used Kjeldahl method. The results showed that from 12 samples of fish all of the samples positive contains formaline which was 6.3352 - 12.2196 mg/Kg and protein in fish was 14.22 - 16.34%. The analysis result of formaline showed that some fish sample were exceed standard of International Program on Chemical Safety (IPCS) in 2002. Acoording to the research result there is no correlation between the content of protein on the fish.
