Abstract:
One of the principle hygiene and sanitation of food at Nutrition Installation of X Hospital
that need more attention was treatment hygiene of eating utensils. Contamination by Escherichia
coli (E.coli) or another bacterium to eating utensils can be caused by washing, drying and
storage process. This research was descriptive using crosssectional approach to know
description of hygiene sanitation and bacteriologis examination of eating utensils at Nutrition
Installation of X Hospital. Data was collected by observation washing, drying and storage
process of eating utensils at VIP and general class (class I, II and III) using check list. The
number of germ examination and identification of E.coli was taken by swab of eating utensils
from 5 (five) types of eating utensils. The result of this research indicated that washing, drying
and storage process of each eating utensil in whole class (100%) was bad. All types eating
utensils contain the number of germ more than 0 colonies per cm2 surface eating utensils and
result of E.coli was positive.
