Abstract:
The effects of the physical properties of honey purity which are marketed in the city of Pekanbaru has been investigated. This research was conducted by using an experimental method. Measurements were performed five times. Honey samples consisted of four samples, namely sample A, a type of Honey Beehive, sample B is honey that has a number registered in BPOM (Center for Food and Drug Administration), while sample C has no BPOM number and sample D is the beehive honey Sialang tree squeezed directly with the honeycomb. Measurement of density, viscosity, refractive index, and electrical conductivity in the original beehive honey sample use a Ostwald viscometer, Abbe refractometer, and conductivitymeter respectively. The results show that the density value for each sample are respectively 1241.75 kg/m3, 1331.25 kg/m3, 1296.5 kg/m3, and 1153 kg/m3. The honey has the highest density. The value of the average viscosity for 4 samples are resectively 1.643 poise, poise 3.631, 2.843 poise and 1.257 poise. The average electrical conductivity is 29.8×10-6 s/cm, 31.8×10-6 s/cm, 54.4×10-6 s/cm and 36×10-6 s/cm respectively. The honey contains minerals, acid and ions which can serves as an electrolyte that can flow an electric current. The value of the average refractive indices are 1.426, 1.5006, 1.4714 and 1.4602 respectively.
